Colour: A lively rose colour with light auburn reflections. Nose: Pink grapefruit and pomegranate oxidating together emerge as peach blossom and mineral camphors. Mouth: A balance between the dry fruit component with the iodised finale. Recommended with salted meats and fresh robiola cheeses. The sparkling Sebastian Rose wine is obtained from red berry vines. In the harvest a cryomaceration is carried out on the grapes, that is their maceration at a temperature of 4 – 5C centigrade, for around 24 hours. The white vinification follows, with fermentation at 13 – 14C for about a month.
