Gold medal winners in the rum category of the Spirits Business competition of 2016. Dark Matter’s colour is a deep ruby – mahogany, whilst on the nose has wonderful notes of ginger cake and allspice. On the palate, its both powerful and smooth, balancing the tastes of ginger, with a pepper spiciness and flavours of sweet biscuit. The finish is feisty and energetic. Produced at Scotland’s first ever rum distillery, founded by the brothers Jim and Ewan of Banchory, who are said to have been driven by science, knowledge and the imagination to pursue the flavours in Dark Matter through ‘systemic study, observation and experiment’.
